Hashbrown Casserole (Funeral Potatoes)

These potatoes are good for any occasion and can feed a very large group. We take them to covered dish dinners, all family get togethers and always have this at Thanksgiving and Easter.

Hashbrown Casserole (Funeral Potatoes)

Creamy and delicious potatoes
Course: Side Dish

Ingredients
  

  • 1 stick melted butter
  • 2 cans of cream of chicken soup
  • 1 ½ cups sour cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 medium chopped onion
  • 1 8 oz cheddar cheese
  • 1 bag – 32 ounces frozen hash browns prefer the cubes thawed
  • 2 ½ cups corn flakes crushed
  • ¼ cup unsalted butter melted

Method
 

  1. Preheat oven to 350℉
  2. Grease a 9×13 casserole dish
  3. Melt 3/4 stick of butter and add onions. Saute a couple of minutes
  4. In a large bowl, add potatoes, pour melted butter and onions over potatoes. Add cream of chicken soup, sour cream, cheese, salt and pepper. Mix until well combined.
  5. Pour into casserole dish.
  6. Place in preheated oven and cook for 30 minutes then remove and pour the cornflakes that have been mixed with the remaining butter over the casserole.
  7. Bake an additional 30 minutes
