Pork Loin with veggies

My family volunteers me to cook a lot! If they need something for a get together, or for their children to take to school, or for a sick friend or someone recovering from surgery, they always call me, which is fine, to cook a dinner for them.

Usually when you sign up for a dinner to provide, on sign up genius, or some other sign up program, everyone always puts Lasagna, Spaghetti, or another casserole (and nothing is wrong with that) but for me nothing is easier to make than a pork loin with potatoes and carrots. It is also a beautiful dinner to deliver and tastes so good.

Our friend, unfortunately had surgery this morning and will be out of commission for a while and I wanted to send something for them to have when they get home. Along with a delicious cake with my fudge icing, I made my go to Pork Loin today and wanted to share with you how easy it really is.

I use my cast iron skillet for everything, including this recipe. It stays on my stove top because of how often I use it. If you make a larger loin and want to cook the veggies at the same time, feel free, but I really like doing it this way.

Pork Roast with Veggies

Prep Time 10 minutes
Cook Time 50 minutes
Servings 8

Ingredients

  • 1 Pork Loin This is a 2 lb loin
  • 1 clove garlic
  • 1 tblsp olive oil I just drizzle over loin
  • 1/4 cup spices – salt, pepper, onion powder, etc use whatever your tastebuds like

Instructions

  1. Preheat cast iron skillet.

    Rub fresh garlic over loin, drizzle oil over one side, sprinkle spices on top then put face down in hot skillet

  2. Drizzle oil on backside and then flip over once browned

  3. Once browned on both sides, put skillet into preheated 325 degree oven for 25 minutes per pound

  4. Once you take roast out, increase oven temperature to 425 degrees and add carrots and cook until brown and tender then add potatoes and cook until done

  5. I deliver this in a disposable container so that they can reheat it all together.
