WW Chocolate Mini Muffins

I was having a Chocolate craving this afternoon and only had protein bars and really wasn’t in the mood for that, so I started looking for recipes for low point muffins. I already make the Kodiak Blueberry ones so I just revised the recipe and made the chocolate ones.

Every other recipe I find calls for mashed up bananas, and I know some of them are okay, but I get tired of the banana taste.

Really, I should have added some PB 2 powdered peanut butter to add a little bit of variety, but I didn’t think about it until after I put these in the oven.

Once you mix the ingredients together, it doesn’t look like you will have enough to make 12, but it comes out just perfect. If you want larger muffins, go ahead and just make 6 for 2 points on the Weight Watchers Blue Plan.

Remember, 1 point each if you make 12. Hope you enjoy them as much as I am.

Kodiak Chocolate Mini Muffins

Bite sized muffins for 1 Pt on Weight Watchers Blue Plan

Ingredients

  • 1-1/4 cups Kodiak Chocolate Muffin Mix
  • 1/4 cup Stevia or other sweetener
  • 1/2 cup applesauce (unsweetened)
  • 1/2 cup water

Instructions

  1. Preheat oven to 350 degrees

  2. Line muffin pan with paper liners then spray liners with non-stick spray

  3. Mix all ingredients together. Be sure all flour is completely mixed

  4. Scoop same sized portions into each liner

  5. Bake at 350 degrees for 20 minutes – if you make 6 muffins increase time by approximately 7 minutes
