Preheat cast iron skillet.
Rub fresh garlic over loin, drizzle oil over one side, sprinkle spices on top then put face down in hot skillet
Drizzle oil on backside and then flip over once browned
Once browned on both sides, put skillet into preheated 325 degree oven for 25 minutes per pound
Once you take roast out, increase oven temperature to 425 degrees and add carrots and cook until brown and tender then add potatoes and cook until done
I deliver this in a disposable container so that they can reheat it all together.
